Sun-dried cardamom in its natural white-to-yellowish colour rather than the forced green of Kerala and Haveri lots. Drying in the sun costs the colour but keeps the taste: it is noticeably spicier and more aromatic than the green variant, which is why premium garam masala houses buy it.
